Ginger- a must have for every woman’s arsenal. Especially if said woman has a minor obsession with raw kale and bean cookies.
Used so widely in Ayurveda, ginger is referred to as the “universal medicine” and, believe me, this name is well deserved. Ginger has a vast array of healing properties and uses. Some of its most popular being:
An aphrodisiac (rawrrrr)
Helper of congestion and respiration
Booster of circulation
Eliminator of joint pain
Curer of nausea, cramps, and even…. GAS!
If only I had known this when I was on my turbo bean kick. Please be advised; the ginger to chickpeas ratio is obviously not enough to assist in the adverse effects of last week’s Chickpea Ginger Cookies. But fear not, I am 10 cookies deep on these and I feel AWESOME. So, for medicinal purposes I would definitely suggest packing these cookies around for holiday emergencies!
RAW VEGAN GINGER COOKIES
YEILD: 24-30 small cookies
2 1/2 Cup Almond Meal/Flour
1 1/3 Cup Buckwheat Flour (Buckwheat groats ground to flour)
1/3 Cup Agave or Maple Syrup
1 T Vanilla
3 T Coconut Sugar
1/2 t Salt
1/2 t Ground Cloves
1/2 t Powdered Ginger OR 1/2 -1 T Fresh Grated Ginger ( to taste)
Additional Coconut sugar to sprinkle on individual cookies once they have dehydrated for 1 hour
In food processor or dry container of a high-speed blender process enough almonds to equal 2 1/2 cups of flour or use purchased almond meal
In food processor or dry container of a high-speed blender process enough oat groats to equal 1 1/3 cup of flour
Add all ingredients to a bowl and stir well
Scoop dough by the Tablespoon (15ml scoop) to ensure each cookie is the same size
Place on a non-stick teflex sheet and flatten each cookie with a fork or a flat object (your finger could even work)
Dehydrate 1-2 hours at 115 degrees
Flip cookies onto mesh sheet and sprinkle each individual cookie with coconut sugar
Dehydrate 10-12 additional hours at 105 degrees to desired texture.
I dehydrated my cookies for a total of 12 hours and they were chewy, which is how I prefer them, as they are similar to a regular cookie.
Eat these fresh out of the dehydrator with a glass of fresh Raw Vegan Egg Nog. YUM
