OK, so just when I thought I would move on from chia pudding I had to experiment with my all time favorite flavors- chocolate and mint. Being a reformed pudding addict, I feel a relapse coming on. This combo put me over the edge, and my SUPER SNACKS series may just be a chia pudding series.
CHOCOLATE MINT CHIA PUDDING
1 Can of LIGHT Coconut milk
2 tbsp Raw Cacao
5-6 Drops of peppermint extract
Liquid Stevia or Maple syrup to taste
4 tbsp Chia seeds
Place all ingredients except chia in the blender. Blend until raw cocoa is completely incorporated. Pour your mixture into a bowl and add in the chia seeds. Stir well so that all the seeds are moist. Leave out on counter for 1 hour, stirring every so often so that it is thoroughly mixed and there are no clumps. Refrigerate for about 10 minutes before you serve it. This is like minty velvet on your tongue… yum
