RAW VEGAN EGG NOG

O.k. so it is officially December 1, which means I can spread my holiday cheer without pissing off the entire neighborhood. I decorated my house at the beginning of November (I know, I know). But even I do not condone humming Christmas tunes and waving to strangers until December 1.

Why so happy you may ask?! Holiday boozing! Not that I am a big drinker, but for some reason Christmas is the only time of year that waking up and drinking rum for breakfast is seemingly justifiable. What better way to make your friends sing Christmas carols and stumble around the tree… get them Christmas drunk, maybe even in the morning.

Egg Nog anyone??

RAW VEGAN EGG NOG

Servings: 2.5 Cups

1 1/4 Cup Raw Cashews

2 Cups Water

3/4 t Vanilla (fresh seeds, powder or extract)

1 t Nutmeg (freshly grated if posssible)

1/2 t Cinnamon

1/8 t Clove (or less)

2 T Maple Syrup (Sweetener of choice- Dates or Agave)

6 Ice Cubes OR 1 Frozen Banana

Rum to taste

Cinnamon stick to garnish

Blend Cashews and water until smooth and creamy

Add vanilla, nutmeg, cinnamon, cloves, and sweetener to taste

Blend in ice cubes or banana

Pour into cups, add Rum, stir and garnish with a dash of cinnamon and a cinnamon stick.
